You need pumpkin puree, eggs, brown sugar, olive oil, flour, baking powder, and homemade Pumpkin Spice for this. The spices I use for the homemade Pumpkin Spice are Cinnamon, Nutmeg, powdered cloves, and powdered ginger. Just mix them and add to the dough. For this recipe, you need pumpkin puree from a nutmeg pumpkin. Since I tend to make lots of pumpkin puree on hand and freeze it, I can start baking the donuts right away. Top it with sweet raisins soaked in apple juice, salty feta, sour pomegranate seeds, and crunchy caramelized pistachios. A savory-sweet honey mustard dressing rounds it out. Mash polo rice with mung beans and meatballs ماش پلو is a typical dish from the city of Isfahan. It is also known as Kate Mash or Dampokhte Mash. You need for mashpolo mung beans, rice, saffron and dried dill. Soak the mung beans overnight or for at least 4 hours in water, which makes them cook faster. Mash Polo is a delicious vegetarian and vegan dish by itself. I served meatballs as a side dish along with it, feel free to serve chicken, fish or even fried eggs instead. Give it a try with a topping of caramelized onions, raisins, cinnamon and walnuts. A tahdig of lava bread completes the delicious dish. If you like Adas Polo you will also like Mash Polo.

Reshteh Polo ba Morgh – رشته پلو با مرغ is a traditional and popular Persian rice dish from the cities of Tehran, Mashhad, and Kermanshah. The dish immediately takes me back to my grandmother’s house, when the whole family gathered for the Norooz festival at her home, where we lived together for many years. It is an aromatic composition of rice, roasted noodles, caramelized onions, raisins, and dates, refined with aromatic spices such as saffron, turmeric, and cinnamon, and topped with rose petals and pistachio sticks. The brown noodles in the batter provide a crunchy Tahdig. Top it with a slowly braised saffron chicken fillet or without chicken for a filling vegetarian dish. Reshteh polo has warm properties.
