Ranginak – Persian Date Dessert رنگینک خرما

Ranginak – Persian Date Dessert رنگینک خرما

Ranginak – Persian Date Dessert رنگینک خرما  is a Persian date dessert that is also known as Ranginak-e Khorma or Halva-ye Khoshk. It is a sweet and delicious specialty from the southern region of Iran, particularly popular in the regions of Bushehr and the provinces of Fars, Kerman, Hormozgan, and Khuzestan where date palm plantations are abundant. As Dates play a significant role in the cuisine of these regions, whether for dishes, desserts, or sweets. To make Ranginak, Medjool dates and walnuts are used and coated with a fragrant mixture of flour, cardamom, butter, powdered sugar, and vegetable oil to achieve a delicate and lightly crispy outer layer. The dessert is then generously sprinkled with ground pistachios, which adds extra crunch and a beautiful green color to the dessert. Every bite of Ranginak is a flavor explosion. Sweet, sticky date meets crunchy nuts and aromatic spices, making it a heavenly treat! Watch my perparation video on Instagram

Causa Rellena Vegana with Mixed Leaf Salad

Causa Rellena Vegana with Mixed Leaf Salad

I have been on a fascinating journey through Peruvian cuisine and discovered Causa Rellena Vegana with Mixed Leaf Salad. This authentic Peruvian recipe was kindly given to me by our favorite Peruvian Restaurant, “Mi Peru” in Darmstadt. Causa is an authentic part of Peruvian cuisine that has its place in every household. Following the motto Veganuary, I’m trying to eat vegan as much as possible throughout the month, so I made Causa Rellena vegan with Mixed Leaf Salad. The vegan version is a cold layered starter made from spicy potatoes and a filling of avocado and quinoa. The filling can differ due to local and regional tastes. You can prepare it with tuna, chicken, seafood, or as vegetarian and vegan. Causa’s great secret is its adaptable flavor and flexibility to suit personal tastes.

During festivities in the Middle East, be it our Nowruz celebration, religious ceremonies, weddings, or Ramadan, Baklava is prepared as a symbol of abundance and communal joy.

The bread is called Nan-e Keshta (نان کِشتا) in Gilani and is also known as Nan-e Khorfe (نان خُرفه) or -Kholfe (خُلفه). In addition, I have a stuffed version of pumpkin flatbread for you today. The filling is with ground walnuts, powdered sugar, and cinnamon. So you get two dishes from one dough. This way, both team sweeties and team savory can enjoy the meal.
