It&#8217;s my go-to place for fresh, seasonal, and local products, which I love to share with you in all sorts of recipes on my blog. So, imagine my excitement when I spotted red and yellow heirloom beets! I knew it was finally time to show you my favorite recipe\u2014Heirloom Beet Carpaccio with Feta and Walnuts. Candy striped beet and Feta? They\u2019re a dream team! Not only do they make my carpaccio look colorful and gorgeous, but they also taste absolutely delicious.<\/p>\n<p>The beet is nice and crunchy, the feta is soft and salty, and the walnuts add a perfect nutty flavor. My favorite dressing ties it all together\u2014it\u2019s made with red onion, juice from 2 bitter oranges, good olive oil, honey, mustard, salt, and pepper. It\u2019s the perfect finishing touch for this carpaccio! Now, I can\u2019t always find bitter oranges at the market, so I get them from my trusted greengrocer. Why? Because our digestive system struggles to break down unprocessed walnuts. So, here\u2019s what I do: I start by rinsing the walnuts in a sieve under running water. Then, I soak them in a bowl with twice the amount of water. Throughout the evening, I change the water regularly, about every half hour. You\u2019ll be amazed at the brown water that comes out\u2014definitely something you don\u2019t want to drink! Always throw it away. The next morning, I give the walnuts another rinse under running water. Now, they\u2019re ready to eat, and they\u2019re so much easier to digest! Plus, they taste super fresh, like they were just harvested. The red one bursts with bright pink and white, while the yellow one glows like sunshine. Nature\u2019s color game at its finest! Compared to regular beetroot, heirloom beet is sweeter and has less of that earthy taste. Its official name is Tonda di Chioggia or Chioggia beetroot, and it\u2019s packed with goodness. It\u2019s rich in vitamin B, potassium, iron, and folic acid\u2014all important for blood health. Soaking the beet even boosts the vitamin and mineral content! Plus, it contains betanin, which strengthens your immune system, helps with blood clotting, and has anti-inflammatory benefits, and it&#8217;s a colorful and delicious way to nourish your body.
