Today, I\u2019ll show you how to make the perfect Date Omelet and Date Spread \u2013 A Persian Breakfast for Mother\u2019s Day (Gheysavah).<\/p>\n<p>A date omelet might sound strange \u2013 sweet mixed with salty and savory? But yes, it really tastes awesome! This mix of flavors is very common in Persian cuisine. The goal is always to find a nice balance. At the end, you can add a little cinnamon on top. The best dates in the world come from the city of Bam in Iran. Iranian dates are dark brown, super sweet, soft, creamy, and juicy. These dates have no preservatives or additives, no sulfur, and no glucose syrup. And they are 100% natural and must be kept in the fridge.<\/p>\n<p>In Persian food stores, you\u2019ll find them stacked in packs in the fridge section. They taste best with a hot glass of tea. Dates also help your digestion as they are high in fiber \u2013 that\u2019s why they are a real superfood.<\/p>\n<ul>\n<li>If you feel tired or low in the afternoon, just a few dates can give you new energy.<\/li>\n<li>Dates warm your body and give you strength. They are full of vitamins and minerals \u2013 like vitamin A, B, and K. They also have a lot of calcium, potassium, zinc, copper, iron, magnesium, and phosphorus. The high iron level is especially good if you have anemia (low iron).<\/li>\n<li>They can even help with hay fever! Because they contain sulfur, dates may reduce allergic reactions.<\/li>\n<li>Dates help with focus too. When I need to concentrate, I eat 1\u20132 dates. They give my brain and nerves quick energy.<\/li>\n<li>If you have trouble falling asleep, dates may help. They contain tryptophan, which helps your body make melatonin \u2013 the sleep hormone. Cook on low heat for 5 minutes until the dates are soft.<\/p>\n<p>In a bowl, beat the eggs with milk and a pinch of salt.<\/p>\n<p>Melt the butter in a frying pan. Add the soft dates and fry them in the butter for 2 minutes. This way, you get all the healthy nutrients with fewer calories \u2013 dates are definitely a healthier option than regular sugar.<\/p>\n<p>Date spread is delicious in yogurt, smoothies, salad dressings, and as a sweetener for ice cream, pudding, pancakes, waffles, and cakes \u2013 like my nectarine coconut yogurt tart. Add honey, orange blossom water, cinnamon, and 150 ml of water.<\/p>\n<p>Cook on medium heat for 4-5 minutes, stirring occasionally, until the dates become soft.<\/p>\n<p>Use a blender to puree the mixture. If the spread is too thick, add a little more water.
