INGREDIENTS TURMERIC SPAGHETTI<\/h2>\n
500 g (1 lb) spaghetti<\/p>\n
1 tsp turmeric*<\/a><\/strong><\/p>\n
2 tsp salt<\/p>\n
1 tsp vegetable oil*<\/a><\/strong><\/p>\n
INGREDIENTS SPAGHETTI TAHDIG (Crispy Bottom)<\/h2>\n
1 tbsp butter<\/p>\n
1 tsp vegetable oil<\/a>*<\/strong><\/p>\n
\u00bd cup water<\/p>\n
1 tsp turmeric*<\/a><\/strong><\/p>\n
MAKE THE PERSIAN BOLOGNESE<\/h2>\n
Saut\u00e9 the diced onion in a little oil until translucent.
\nAdd the green chili and Advieh, stir for a moment.
\nBrown the ground beef, then press in the garlic.
\nMake a small well in the pan, add tomato paste, and fry until fragrant. Mix it with the meat.
\nAdd the canned tomatoes and water (use the tomato can to measure). Simmer for 15\u201320 minutes.
\nSeason with salt and pepper, then stir in fresh lemon juice.<\/p>\nTip: The Advieh gives the Bolognese its unique Persian warmth, but if you don\u2019t have it, you can grind together green and pink peppercorns, rose petals, cinnamon, cardamom, cumin, orange peel, marjoram, chili, and coriander.<\/p>\n
COOK THE TURMERIC SPAGHETTI<\/h2>\n
Bring a pot of water to a boil with 2 tsp salt.
\nAdd turmeric and oil, then cook the spaghetti 8\u201310 minutes until al dente.
\nDrain and rinse immediately with cold water. Let it drain completely.<\/p>\nTip: Rinsing the pasta stops it from overcooking and ensures your spaghetti has the perfect texture after steaming.<\/p>\n
LAYER AND STEAM THE SPAGHETTI TAHDIG<\/h2>\n
In a non-stick pot<\/a>*<\/strong> or rice cooker<\/a>*<\/strong>, mix butter, oil, water, and turmeric, then bring to a gentle boil.
\nSpread a layer of spaghetti on the bottom, gently mixing.
\nAdd a layer of Bolognese in the center, leaving the edges free. Alternate layers until all ingredients are used, finishing with spaghetti on top.
\nWrap the lid in a kitchen towel (unless using a digital rice cooker) and steam on low heat for 40\u201350 minutes.
\nInvert onto a plate, reveal the golden Tahdig, and serve immediately.<\/p>\nTip: The crispy bottom is the best part \u2013 don\u2019t skip the turmeric and butter mix!<\/p>\n
