A delicious Soulfood full of persian flavors, in which flat green beans play the leading role.
Peel the onion, divide in half and cut into rings.
Heat some oil in a pan and fry the onions until caramalized.
Season with 1 tsp turmeric and turn everything once.
Add tomato paste and fry briefly until the smell rises.
Halve and dice the tomatoes and add with a glass of water. Simmer for about 5 minutes at medium temperature.
In the meantime, wash flat green beans, cut off the ends, pull the strings from the beans and cut them into pieces about 3 - 5 cm wide. Put aside.
Peel potatoes, cut in half and divide in half again. Put aside.
Add flat green beans and potatoes, adding a little more water if necessary.
Season with spices, salt and pepper and simmer for 20 - 30 minutes at medium temperature. The beans and potatoes should still have a bite, but should already be cooked through.
Serve with Nan-e Taftoon - Nanbread from the pan, Nan-e Barbari - Flatbread , Mast-e Chekideh - Labneh , Dugh or Sir Torshi - Pickled Garlic.
