For my Sharbat-e Panirak - Wild Mallow Drink you need wild mallow flowers, sugar syrup and lemon or lime juice.
Pour cold water over mallow flowers, add ice cubes and infuse for 2 to 20 minutes maximum. Do not infuse too long, it will lose its color.
Soak basil seeds in water until they get jelly-like, this will take about 5 minutes.
If you want to use khakshir, rinse the seeds well first, as they usually contain sand. Here I explained it a more detailed way.
After a maximum of 20 minutes, strain the mallow flowers through a sieve.
Bring water to a boil, reduce temperature to low and add sugar. Simmer for 10 minutes until syrupy.
For a very special flavor, add saffron and rose water at the end. Allow to cool.
Grind 1/2 tsp saffron threads finely, pour over 2 ice cubes and let stand.
Add 2 - 3 tablespoons of sugar syrup to each glass, you can use less or more sugar syrup depending on your taste. Add 1 tsp of rose water (optional), 1 tbsp of soaked basil seeds (optional), 120 ml of mallow flower extract and add the mallow flower ice cubes.
You can vary the color shade from light to dark depending on how much mallow flower extract you add.
You can leave the Drink blue and serve it so.
For a pink color, add a few drops of lemon or lime juice, the more you add the lighter the color becomes. If you don't stir the drink, it will stay pink at the bottom of the glass and blue at the top.
For the yellow color, simply add 1 tablespoon of saffron extract.
For a green version, add 1 tsp of honey.
