Zutaten

INGREDIENTS PERSIAN BREAD BOATS

  • 1 Package dry yeast
  • 2 tsp. sugar 
  • 100 ml lukewarm water
  • 500 g flour type 550
  • 1 tsp. salt
  • 200 ml lukewarm water
  • 3-5 tbsp. olive oil 

INGREDIENTS ROOMAL 

  • 2 egg yolks
  • A bit of water 

INGREDIENTS TOPPING 

  • 1 tbsp. sesame seeds
  • 1/2 tbsp. black cumin 

Anleitungen

PREPARATION PERSIAN BREAD BOATS

  1. Dissolve yeast with sugar in lukewarm water and let it rest for 15 minutes. If small bubbles appear, you can be sure that the yeast is active. If not, use a new package.

  2. First sift the flour through a sieve. Knead with salt, lukewarm water, yeast mixture and 3 tablespoons of olive oil in a food processor for at least 10 minutes. If the dough is too dry, add the remaining olive oil one by one. If the dough is too wet and sticky, then add a little flour a spoon at a time. 

  3. Coat a bowl with a little olive oil and place the kneaded dough in it. Rub the dough slightly with olive oil. Cover the bowl with a kitchen towel and let it rest in a warm place for 60 minutes. 

SHAPE THE DOUGH

  1. Preheat the oven to 220°  

  2. Flour your work surface and knead the dough again with your hands for about 5 minutes.

  3. Divide the dough into 3 portions.

  4. Cover a baking tray with baking paper.

  5. Now form the dough with your hands into an oval, take the boat in your hand and stretch it carefully, put the dough on your baking tray. Now press the dough with your hand from the inside to the outside, leaving a thick edge. Finally, press with your fingers claw-like patterns into the dough. Press the ends of the flatbread firmly and twist slightly. 

PREPARATION ROOMAL 

  1. For the roomal, mix the egg yolks with very little water.

  2. Brush the bread boats all around with the Roomal.

  3. Once well coated, sprinkle the center with sesame seeds and black cumin.

  4. Place the bread boat in the preheated oven and bake for about 15 - 20 minutes.

  5. In the meantime, continue with the next piece of dough as described above. Continue in this way until all 3 pieces of dough are baked. 

Rezept-Anmerkungen

Serve with hummus or several dips.
