Khorak-e Loobia Sabz - Flat Green Beans with Tomatoe خوراک لوبیا سبز

  • 1 red onion
  • 2 tbsp good olive oil* 
  • 1 tsp turmeric*
  • 1 tbsp tomato paste*
  • 4 tomatoes
  • 400 g flat green beans 
  • 4 large potatoes


  • 1 tsp cumin*
  • 2 tsp paprika powder*, sweet
  • a pinch of nutmeg*  freshly grated
  • salt, pepper



  1. Peel the onion, divide in half and cut into rings.

  2. Heat some oil in a pan and fry the onions until caramalized.

  3. Season with 1 tsp turmeric and turn everything once.

  4. Add tomato paste and fry briefly until the smell rises.

  5. Halve and dice the tomatoes and add with a glass of water. Simmer for about 5 minutes at medium temperature. 

  6. In the meantime, wash flat green beans, cut off the ends, pull the strings from the beans and cut them into pieces about 3 - 5 cm wide. Put aside. 

  7. Peel potatoes, cut in half and divide in half again. Put aside.

  8. Add flat green beans and potatoes, adding a little more water if necessary. 

  9. Season with spices, salt and pepper and simmer for 20 - 30 minutes at medium temperature. The beans and potatoes should still have a bite, but should already be cooked through. 


Serve with Nan-e Taftoon - Nanbread from the pan, Nan-e Barbari - Flatbread , Mast-e Chekideh - Labneh , Dugh or Sir Torshi - Pickled Garlic.
