Ingredients

INGREDIENTS FOR AJIL-GRANOLA

  • 5 tbsp coconut oil
  • 250 ml date syrup*
  • 3 tbsp honey
  • 1 vanilla bean seeds
  • 500 g rolled oats
  • 1 tsp salt
  • 1 cup sunflower seeds
  • 1 cup pumpkin seeds
  • 1 cup almonds slivered
  • 1 cup pistachios pistachios
  • 100 g dried sour cherries

Instructions

HOW TO MAKE PERSIAN AJIL-GRANOLA

  1. Preheat the oven to 170°C (340°F).
  2. In a large bowl, mix the coconut oil, date syrup, honey, and vanilla seeds until smooth.

  3. Add all the other ingredients except the dried sour cherries.

  4. Stir well until all the oats and nuts are coated.

  5. Spread the mixture evenly onto two baking trays lined with baking paper.
  6. Bake in the oven for about 20–25 minutes.
  7. Keep a close eye on the granola during the last 5 minutes — it can burn quickly!
  8. Once the granola is golden brown, take it out of the oven and let it cool completely.
  9. After it cools, mix in the dried sour cherries.
  10. Store the granola in an airtight container and use it within 2 weeks.

Serve with yogurt or milk.
