A savory and sweet date omelet from South of Iran
Put the dates in a small pot with cinnamon, ginger, and 3 tablespoons of water.
Cook on low heat for 5 minutes until the dates are soft.
Melt the butter in a frying pan.
Add the soft dates and fry them in the butter for 2 minutes.
Pour the egg mixture over the dates and let it cook until it sets.
Serve the omelet on a plate and sprinkle with more cinnamon.
