Ingredients

INGREDIENTS HEIRLOOM BEET CARPACCIO WITH FETA AND WALNUTS

  • 100 g walnuts
  • 4 red heirloom beets
  • 3 golden heirloom beets
  • 200 g feta cheese

INGREDIENTS FOR DRESSING

  • 1 red onion
  • 2 bitter oranges or bitterorangepaste
  • 6 tbsp good olive oil
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • salt pepper

Instructions

PREPARATION OF HEIRLOOM BEET CARPACCIO

SOAK THE WALNUTS

  1. Rinse the walnuts thoroughly, then soak them in a bowl of water overnight.

  2. The next day, drain and rinse them again under clean water.

PREPARATION HEIRLOOM BEET CARPACCIO

  1. Peel the red and golden heirloom beets using a peeler and slice them super thin. I like to use an all-purpose slicer for this.

  2. Peel the onion and slice it into rings.

PREPARATION DRESSING

  1. Squeeze the bitter oranges or orange and mix the juice with olive oil, honey, mustard, salt, and pepper until well combined.

ASSEMBLING THE CARPACCIO

  1. Arrange the red and golden heirloom beet slices on a plate.

  2. Add the red onion rings and walnuts on top, drizzle with the dressing, and top with crumbled feta.
