Rinse the walnuts thoroughly, then soak them in a bowl of water overnight.
The next day, drain and rinse them again under clean water.
Peel the red and golden heirloom beets using a peeler and slice them super thin. I like to use an all-purpose slicer for this.
Peel the onion and slice it into rings.
Arrange the red and golden heirloom beet slices on a plate.
Add the red onion rings and walnuts on top, drizzle with the dressing, and top with crumbled feta.
