High pressure lobster in saffron butter

Lobster and butter are symbiotic when prepared and my recipe is a perfect water-in-mouth combination.

Zutaten

INGREDIENTS FOR SAFFRON BUTTER 

  • 100 g homemade butter
  • 1/2 tsp saffron threads
  • 1 icecube

INGREDIENTS FOR 2 LOBSTER HALVES

  • 2 halves high-pressure lobster 
  • 3 tbsp. homemade butter
  • fleur de sal
  • pepper freshly ground

TOPPING

  • 1 tbsp Dill chopped
  • 1 Lemon juice of it

Anleitungen

PREPARATION SAFFRON BUTTER 

  1. Grind saffron threads in a mortar, place over an ice cube and allow to melt. 

  2. Heat the butter until it melts and add the prepared saffron infusion.

PREPARATION HIGH PRESSURE LOBSTER

  1. Remove lobster from package, place in a colander in a bowl and let defrost overnight in the refrigerator.

  2. The next day, preheat the oven to 160°C top heat. 

  3. Brush a grill pan with butter and allow to heat. 

  4. Season lobster halves with salt and pepper, sear first on the meat side for about 2 min. Then turn to the shell side and fry for another 2 min. 

  5. Brush a baking dish with some saffron butter, place lobster halves in and drizzle each with 2 tbsp saffron butter. Place in oven for 15 minutes. 

  6. Drizzle lobster halves with remaining saffron butter and sprinkle with chopped dill. If you desire, you can enjoy them with a little lemon juice.
