Lobster and butter are symbiotic when prepared and my recipe is a perfect water-in-mouth combination.
Grind saffron threads in a mortar, place over an ice cube and allow to melt.
Heat the butter until it melts and add the prepared saffron infusion.
Remove lobster from package, place in a colander in a bowl and let defrost overnight in the refrigerator.
The next day, preheat the oven to 160°C top heat.
Brush a grill pan with butter and allow to heat.
Season lobster halves with salt and pepper, sear first on the meat side for about 2 min. Then turn to the shell side and fry for another 2 min.
Brush a baking dish with some saffron butter, place lobster halves in and drizzle each with 2 tbsp saffron butter. Place in oven for 15 minutes.
Drizzle lobster halves with remaining saffron butter and sprinkle with chopped dill. If you desire, you can enjoy them with a little lemon juice.
