INGREDIENTS FOR CHOCOLATE BUNDT CAKE WITH RUBY CHOCOLATE GLAZE

Wet Ingredients

  • 80 g butter
  • 2 eggs
  • 250 ml milk
  • 1 tsp vanilla extract 
  • 270 g flour
  • 300 g sugar
  • 65 g cocoa powder

Dry Ingredients

  • 8 g baking powder
  • 7 g baking soda
  • 1 tsp salt

INGREDIENTS FOR GLAZE

  • 250 g Ruby chocolate
  • 8 fresh blackberries

PREPARATION CHOCOLATE BUNDT CAKE WITH RUBY CHOCOLATE GLAZE

  1. Preheat oven to 180°.

PREPARING THE WET INGREDIENTS

  1. Melt butter in a saucepan.

  2. Mix eggs, milk, vanilla extract in a food processor.

  3. Add the melted butter. 

PREPARING THE DRY INGREDIENTS

  1. Combine flour, sugar, baking powder, baking soda and salt in a bowl except for the cocoa powder and mix well.

  2. Combine the dry ingredients with the wet ones and mix everything together to create a smooth dough.

  3. Remove two-thirds of the dough, add in the cocoa powder and mix well. One third of the dough remains light. 

  4. Butter a mold and dust it with flour.

  5. Place the light batter in the bottom of the mold and add the dark batter on top.

  6. Draw circles in the pan with a fork for marbling, then bake for 40 - 45 minutes. Test with a chopstick to make sure the dough is baked all the way through.

  7. Remove from oven and let cool in the pan on a rack for 10 minutes. This will cause the dough to shrink a bit, the bundt cake can then be easily flipped and cooled completely on a cooling rack.

PREPARING THE GLAZE

  1. Melt Ruby chocolate in a water bath and stir well.

  2. Pour the melted Ruby chocolate over the chilled cake.

  3. Decorate with blackberries.
