Nan-e Shirin - Persian Sweet Bread

It tastes similar to a yeast roll, only a little firmer and less sweet.

Zutaten

INGREDIENTS FOR NAN-E SHIRIN

  • 7 g dry yeast
  • 25 ml lukewarm water
  • 100 g sugar
  • 2 eggs
  • 200 ml milk
  • 100 g butter
  • 1 pinch of salt
  • 500 g flour

INGREDIENTS FOR THE GLAZE (Ro-Mal)

  • 1 egg yolk
  • 1/4 tsp saffron threads
  • rose water* (optional)
  • Sesame seeds* (optional)

Anleitungen

PREPARATION DOUGH

  1. Take 1 tablespoon of the 100g sugar, mix with lukewarm water and add dry yeast. Set aside for 10 minutes until the yeast starts to bubble. 

  2. Mix rest of the sugar, eggs, milk, butter and salt.

  3. Add yeast and continue mixing.

  4. Add flour one at a time until a smooth dough forms. The dough should not be sticky, otherwise add a little flour. Mix in a mixer for 10 minutes or knead by hand.  

  5. Brush a bowl with some oil, put the dough in it, cover with a clean tea towel and let it rise in a warm place for 2 hours. 

  6. Preheat the oven to 180°.

  7. Flour the work surface.

  8. Cut dough into pieces of about 125 g, shape into balls and roll out.

  9. Cut diamonds with a pizza cutter and use a fork to prick along the diamonds or press patterns into the dough with your favourite stamp. 

PREPARATION GLAZE (ROO-MAL)

  1. Grind saffron threads in a mortar, pour 5 ml of boiling water over it and let it infuse for 10 minutes, covered.  

  2. Add to the egg yolk and mix well (if you use rose water, add it too and mix well). 

  3. Use a brush to coat the prepared doughs with the glaze (if you use sesame seeds, sprinkle with sesame seeds). 

BAKE NAN-E SHIRIN

  1. Place on a baking sheet lined with parchment paper and bake for about 30 minutes. 

Rezept-Anmerkungen

The bread will keep for a week if wrapped in an airtight container. It can also be frozen and baked up in the toaster when needed.
