Shirini Badami - Almond cookies for Nowrooz

Zutaten

INGREDIENTS SAFFRON EXTRACT

  • 1/2 tsp saffron threads
  • 25 ml hot water

INGREDIENTS SHIRINI BADAMI

  • 80 g butter room temperature
  • 50 g powdered sugar
  • 1 egg yolk room temperature 
  • 1/2 tsp cardamom
  • 50 g almonds  grated
  • 130 g flour
  • 1/4 tsp salt

INGREDIENTS TOPPING 

  • 40 Whole almonds
  • 1 tbsp pistachios grated
  • 2 tbsp liquid honey 

Anleitungen

PREPARATION SAFFRON EXTRACT

  1. Grind saffron finely in a mortar and pour hot water over it. Leave covered for 10 minutes.

PREPARATION SHIRINI BADAMI 

  1. Beat butter with powdered sugar until creamy.

  2. Add egg yolk, cardamom and continue mixing. 

  3. Add grated almonds with 2 tablespoons saffron extract to the batter. 

  4. Sift flour and salt finely, add to the dough by tablespoon and continue mixing. 

  5. Form a dough and let it rest for 30 minutes at room temperature. 

PREPARATION TOPPING

  1. Preheat oven to 150°. 

  2. Roll out dough between 2 sheets of baking paper with a pastry roller.

  3. Cut out cookies with a cookie cutter.

  4. Brush with saffron extract, place an almond in the center and decorate with some grated pistachios. 

  5. Bake in the oven for about 15 - 20 minutes. Let cool. For a pretty glaze, you can brush them with liquid honey.

The cookies will keep for 3 weeks in an airtight container.
