Have you ever been to Morocco? Then you probably know the local street food Sfenj, pronounced Sfinsch. It is a popular street food in the souks of Morocco and the many Sfenj bakeries. You have probably also seen Moroccans with a Sfenj handbag 😉 For they are tied together with a “ribbon” of palm fronds or a string and sold as a way to carry them. Sfenj is prepared fresh in the morning and served while still warm for breakfast. And it’s enjoyed with Moroccan mint tea or a strong coffee in the afternoon. The best way to eat them is plain, but some also like to roll them in sugar, and others soak them in honey or syrup. I’ve made the recipe for Sfenj Moroccan donuts a few times, and the one I liked best was this version from Atlas Kitchen, which I’m sharing with you today. Be sure to give it a try! Finally, spring is here, and from March to May is the wild garlic season. In fact, much too short, so I preserve the wild garlic as a delicious wild garlic pesto with roasted cashew nuts and spicy feta, and in a snap, you can spice up pasta, risotto, gnocchi, baked potatoes, grilled meat, or simply a sandwich or sandwich. You only need a few ingredients to whip up this delicious pesto in minutes. Ingredients like wild garlic, roasted cashews, spicy feta, some lemon juice, and the best olive oil are combined in this pesto to a perfect flavor.

Monday was the beginning of spring and the same time as our New Year Norooz. On this day, many dishes are prepared with fresh herbs traditionally, for example, Sabzi Polo – Persian Herb Rice سبزی پلو ، Sabzi Polo ba Mahi – Persian herb rice with orange stuffed trout, Kuku Sabzi – Persian Herb Frittata , Ashe Reshteh – noodle soup with herbs, and Sabzi Khordan – Persian herb platter. Sabzi means herbs, and polo means rice, that is herbed rice. Tender fresh herbs are the first signs of spring, and in my Sabzi Polo, chopped dill, parsley, cilantro, scallions, a whole bulb of garlic, ghee, and saffron add a delicious touch to the rice. One of our favorite desserts is the Italian Tiramisu. For the National Day of Pistachio, I pimped the traditional dessert with a new look. Bye Bye retro style, Hello new cool look – Mini Pistachio Tiramisu Charlotte – تیرامیسو پسته . To make this look, place ladyfingers dipped in vanilla essence all around a jar and line the bottom with ladyfingers. A pistachio cream made of mascarpone is whipped creamy with white chocolate, cream, homemade pistachio butter, and caster sugar and layered with chopped pistachios and more ladyfingers. Fruity raspberries, white chocolate drops, and chopped pistachios finish off the new look. By the way, my Mini Pistachio Tiramisu Charlotte is eggless and alcohol-free. It’s not only an eye-catcher but also tastes perfect. Getting to that perfect result is quick and even easier than you think. Try this royal dessert for Norouz to treat your guests.

It is impossible to imagine Persian cuisine without Kabab, as Kababs of all types are the most popular dishes in Iran. Kabab Koobideh beats all other Kabab dishes on the scale of preference. Kabab Koobideh typically is made with ground beef or lamb or a mixture of both. Also very popular is Djudje Kabab, which like the other kababs, is best grilled on skewers. Today I have a kabab version made with minced chicken, which doesn’t require skewers. It’s easy to prepare in a pan, in the oven, or even in the Airfryer. For Kabab Tabei Morgh – Saffron Chicken Mince کباب تابه ای مرغ, chicken mince is combined with onions, saffron essence, and lemon and coated with a butter saffron essence. It is also great with salads or wraps. An incredibly delicious recipe that you should try.

Mash polo rice with mung beans and meatballs ماش پلو is a typical dish from the city of Isfahan. It is also known as Kate Mash or Dampokhte Mash. You need for mashpolo mung beans, rice, saffron and dried dill. Soak the mung beans overnight or for at least 4 hours in water, which makes them cook faster. Mash Polo is a delicious vegetarian and vegan dish by itself. I served meatballs as a side dish along with it, feel free to serve chicken, fish or even fried eggs instead. Give it a try with a topping of caramelized onions, raisins, cinnamon and walnuts. A tahdig of lava bread completes the delicious dish. If you like Adas Polo you will also like Mash Polo.

Zereshk Polo ba Morgh – Persian Barberry Rice With Chicken is a simple, aromatic and traditonal persian dish, and a must have on a festive table. Zereshk Polo ba Morgh is a dish of tender chicken drumsticks braised in saffron and served with fragrant saffron rice and caramelized sweet and sour barberries. Zereshk means barberries, polo rice, and morgh is simply chicken. Some Persians add tomato paste to the chicken drumsticks, but I personally prefer the pure flavor of saffron and bay leaves. This recipe can also be cooked with chicken breast or even a whole chicken.

Koofteh Rizeh – Lamb meatballs with mint in Tomato Sauce کوفته ریزه is also called Gheymeh Rizeh (قیمه ریزه), Kale Ghondjishki (کله گنجشکی) or Ghermez Rizeh (قرمز ریزه ). It is a traditional and popular dish from the marvelous city of Isfahan. These simple meatballs are prepared without any use of breadcrumbs, bread, or egg, and instead, chickpea flour is used. The meatballs are mixed with minced lamb, onions, turmeric, dried, and finely grated mint. Then the meatballs simmer in a spicy sauce made with tomato paste, onions, turmeric, and dried mint. Persian Sangak or Taftoon bread is commonly served with meatballs to soak up the tomato sauce. Serve with a bit of torshi (pickled vegetables) and everybody is satisfied. A filling dish that can be prepared quickly.
