To make this day extra special, I have a tasty recipe for you: fluffy Pistachio Rolls with Creamy Pistachio Frosting. These soft, sweet yeast rolls are filled with creamy pistachio spread and topped with crunchy chopped pistachios. To finish, they’re covered in a smooth pistachio cream frosting, drizzled with sweet white chocolate, and sprinkled with more pistachios for that perfect touch.

PISTACHIO ROLLS – A DELIGHT FOR PISTACHIO DAY

For these heavenly pistachio rolls, you’ll need butter, milk, flour, sugar, vanilla sugar, a pinch of salt, and fresh yeast to create a soft and fluffy dough.

The filling consists of a luscious layer of creamy pistachio spread and crunchy chopped pistachios, offering a delightful green color and a tender texture.

To top it off, the rolls are finished with a rich frosting made from smooth white chocolate, cream cheese, powdered sugar, and a hint of pistachio cream, adding irresistible sweetness.

For the perfect final touch, they’re drizzled with glossy white chocolate and sprinkled with finely chopped pistachios, creating a melt-in-your-mouth treat.

INGREDIENTS FOR THE DOUGH

60 g butter

270 ml milk

500 g flour

50 g sugar

1 packet vanilla sugar

a pinch of salt

half a cube of fresh yeast

INGREDIENTS FOR THE FILLING

1 jar pistachio spread

20 g chopped pistachios

INGREDIENTS FOR BRUSHING BEFORE BAKING

200 ml cream

INGREDIENTS FOR THE FROSTING

100 g cream cheese

1 tbsp powdered sugar

1 tbsp pistachio spread

INGREDIENTS FOR THE TOPPING

30 g chopped pistachios

100 g white chocolate

PREPARATION OF PISTACHIO ROLLS

Warm the butter and milk in a pot, then allow the mixture to cool slightly.

In a bowl, combine the flour, sugar, vanilla sugar, and a pinch of salt. Create a well in the center of the dry ingredients and crumble the fresh yeast into it.

Pour the lukewarm milk mixture into the well, then knead everything together with a dough hook until you achieve a smooth dough.

Cover the dough with a damp kitchen towel and let it rise for 45 minutes.

PREPARATION FILLING

Roll out the dough and spread a layer of pistachio spread over it, reserving one tablespoon for the frosting later.

Evenly sprinkle chopped pistachios on top of the spread.

Starting from the long side, roll up the dough and cut it into 12 equal pieces using a knife or thread.

Place the rolls in a greased cinnamon roll baking pan* with the cut side facing up.

Cover the pan and let the rolls rise for an additional 30 minutes.

BAKING

Pour the cream over the rolls.

Bake in a preheated oven at 160°C (fan) for about 25 minutes.

PREPARATION OF THE FROSTING

Mix the cream cheese, powdered sugar, and the reserved pistachio spread until smooth and creamy.

Spread the frosting evenly over the slightly cooled pistachio rolls.

PREPARATION OF THE TOPPING

Melt the white chocolate over a water bath.

Drizzle the melted chocolate over the pistachio rolls and sprinkle with chopped pistachios.

Best enjoyed fresh from the oven – soft, creamy, and simply irresistible!
