Not finding what she wanted, she decided to whip up her own version of luxurious Dubai chocolate, packed with high-quality ingredients like Kadayif, Tahini, and Pistachio cream.

INGREDIENTS FESTIVE DUBAI CHOCOLATE DATES
125g Kadayif Taze (Angel hair pastry)
25g butter or ghee
1 tbsp tahini (sesame paste)
1 tbsp gingerbread spice
100g pistachio paste
75g pistachio cream
a splash of orange blossom water (optional)
30 Medjool dates
INGREDIENTS CHOCOLATE GLAZE
100g white chocolate
100g dark chocolate
1 tbsp gingerbread spice (for the dark chocolate glaze)
INGREDIENTS TOPPING
1 tbsp finely ground pistachios
1 tsp raspberry powder
grated gingerbread
PREPARATION FESTIVE DUBAI CHOCOLATE DATES
Cut the Kadayif into thin strips.
Melt the butter in a pan and fry the Kadayif until golden and crispy. Add the gingerbread spice, tahini, pistachio paste, and pistachio cream, and mix well. Place in the freezer for 20 minutes.
Meanwhile, make a slit in the Medjool dates and remove the pits.
Melt the chocolate in a double boiler.
Fill the dates with the mixture, skewer them with a toothpick, and dip them into the chocolate.
Immediately sprinkle with your choice of toppings, such as finely ground pistachios, grated gingerbread, or raspberry powder.
Let them drip on a rack.
Place in the fridge until the chocolate hardens.
The dates should be stored in the fridge but allowed to come to room temperature before serving.
