From that very first sip, I know this day will be special—filled with top-quality ingredients, exciting flavors, and many delicious surprises. I’m particularly looking forward to the incredible tuna, served at its freshest and best. With anticipation, I dive into a world of Southeast Asian delights, allowing the amazing dishes at FrischeParadies to inspire me.

FrischeParadies isn’t just a dream for food lovers—it also has a charming bistro where top-quality ingredients are transformed into incredible dishes. Before the event begins, my husband and I take a moment to indulge in a delicious meal here. A table reservation is a must, as this place is highly popular!
The experience starts with an unforgettable appetizer: fresh oysters that simply melt in your mouth, bursting with incredible freshness. They’re served with a tangy yuzu vinaigrette—so good, you’ll want to lick your fingers! But the real star of the meal is the main course—a stunning seafood platter featuring salmon, monkfish, redfish, and gurnard, all served in a rich and velvety truffle cream sauce. Every bite is a delight—tender, flavorful, and absolutely heavenly.
This dining experience completely wins us over and makes our visit to FrischeParadies truly unforgettable!
YELLOWFIN TUNA FILLETING
After our meal, it’s time for an impressive yellowfin tuna filleting demonstration. The 23 kg fish is expertly sliced into perfect fillets with absolute precision and skill. The fishmonger tells me that the heaviest tuna he has ever prepared weighed over 120 kg—an incredible feat of craftsmanship. It’s fascinating to watch how the tuna is transformed into flawless fillets, not only stunningly fresh but also remarkable in texture and color.
To top it off, we get to taste fresh tuna tartare—so fresh, it’s a rare treat. The tuna is tender and juicy, with a natural sweetness that pairs beautifully with the delicate flavors of spices and herbs. The experience continues with fresh sushi, a specially curated Asian menu at the bistro, and tasting stations featuring the finest ingredients from the Far East.
SASHIMI-QUALITY TUNA
To my delight, I get my hands on a beautiful piece of true sashimi-quality tuna—a rare treat you won’t find just anywhere. What makes this quality so special? The fish is so fresh that it’s perfect for raw preparations. Its texture is buttery-soft, packed with flavor, and incredibly juicy.
If you’ve never worked with sashimi-grade fish before, here’s a tip: the less you do, the better! Overcooking can ruin its exceptional texture. Whether enjoyed raw, as tartare, lightly seared, or as delicate carpaccio—this tuna shines best in its purest form.
ASIAN-STYLE PORK BELLY
Let’s head to the meat stand, where we’re in for a real treat. The pork belly is marinated in an Asian style for 24 hours and then perfectly grilled. The crispy skin combines beautifully with the tender, juicy meat, creating an unforgettable taste experience. The marinade, made with soy sauce, spices, and a touch of sweetness, gives the pork belly a rich and complex flavor. GRILLED TUNA FOR NOWROOZ FEAST
I was inspired by all the delicious flavors and the fresh preparation, so for Nowrooz, I’ve reinterpreted tuna. For my Nowrooz celebration, I wanted to preserve the sashimi quality of the tuna. That’s why I marinated it lightly and then grilled it for exactly one minute on a hot grill. The extreme heat forms a delicate crust on the outside, while the inside stays raw and silky. It’s an absolute treat!
To go with it, I made traditional Sabzi Polo, a herb rice with fresh dill, coriander, and fenugreek leaves, filling the air with a fragrant aroma. It’s a perfect blend of Persian tradition and high-quality fish from FrischeParadies! I’ll be sharing more details about this soon.
