QUICK FLATBREAD PIZZA FROM THE OVEN

I’m all about a thin pizza crust, which is why I went with flat Arabic bread for this recipe. But if you like your pizza thick and fluffy like the American style, airy flatbread works great too. It turns out super crispy in the oven and is the perfect base for whatever toppings you love.

If you’ve got a bit more time, definitely try making my homemade lavash bread. It only takes an extra 20 minutes to prepare, and you’ll end up with a really thin, crispy crust that takes your pizza experience up a notch! My flatbread pizzas are completely oil-free, but if you like, you can drizzle a little oil over them at the table.

INGREDIENTS FOR FLATBREAD PIZZA

4 Lavash flatbreads or tortilla wraps

INGREDIENTS FOR THE SAUCE

250 ml tomato purée

1 tbsp Harissa paste

1 tsp ground coriander

½ tsp ground cumin

Salt and pepper to taste

INGREDIENTS FOR THE TOPPING

150 g feta cheese, crumbled

1 red onion, thinly sliced

100 g cherry tomatoes, halved

1 pinch sumac

PREPARATION FLATBREAD PIZZA

Preheat the oven – Set the oven to 200°C top/bottom heat or 180°C fan

Mix the sauce – Combine the tomato purée with Harissa paste and spices

Top the flatbread – Spread 2 tbsp of sauce on each flatbread then add the onions followed by the halved cherry tomatoes and feta or any other toppings you like.

Bake – Place the topped flatbreads on a baking tray and bake for 8 to 10 minutes until the cheese is slightly melted
