Mash Polo is a delicious vegetarian and vegan dish by itself. I served meatballs as a side dish along with it, feel free to serve chicken, fish or even fried eggs instead. Koofteh Rizeh – Lamb meatballs with mint in Tomato Sauce کوفته ریزه is also called Gheymeh Rizeh (قیمه ریزه), Kale Ghondjishki (کله گنجشکی) or Ghermez Rizeh (قرمز ریزه ). It is a traditional and popular dish from the marvelous city of Isfahan. These simple meatballs are prepared without any use of breadcrumbs, bread, or egg, and instead, chickpea flour is used. The meatballs are mixed with minced lamb, onions, turmeric, dried, and finely grated mint. Then the meatballs simmer in a spicy sauce made with tomato paste, onions, turmeric, and dried mint. Persian Sangak or Taftoon bread is commonly served with meatballs to soak up the tomato sauce. Serve with a bit of torshi (pickled vegetables) and everybody is satisfied. A filling dish that can be prepared quickly.

Believe me, the spicy and oriental sweet fragrance is a true joy for your senses. In daily life, quince, carrot, rose or cherry jam are more popular in Persia. My ice-cooled Majoon – date ice cream shake with nuts معجون is a great way to cool down not only during the summer. Majoon means a “combination of products”, as it contains many different ingredients. Dates provide a natural sweetness, ripe bananas, vanilla ice cream and cream make the ice cream creamy, and the nuts in and on the ice cream as topping add crunch. I used walnuts, pistachios, almonds, and cashews. Finally, garnish with some date syrup and Majoon is a sweet, tasty, and also healthy snack for between meals!

So heat up the charcoal grill, for inspiration I have a delicious Kabab recipe for you today, it is nice and juicy, savory and spicy. Typical oriental spices such as cumin and cinnamon give my Kabab Looleh- minced meat skewers from the grill – کباب لوله a unique flavor. I used half lamb and half ground beef for the grilled skewers and seasoned them with some chopped fresh parsley. The ground beef is simply wrapped around the grill skewers and then grilled over the charcoal for a few minutes. For a special event or for even more flavor, you can also wrap the ground beef skewers around cinnamon sticks and then grill them. Shirini Keshmeshi are crinkled raisin cookies and taste buttery, are chewy on the inside and crispy on the outside and absolutely my favorite for persian Norouz. For me Shirini Keshmeshi must have crinckles on top and golden edges. Therefore I made them with butter, flour, powdered sugar (creates their cracked appearance), a little bit oil, an egg, vanilla extract and they are loaded with raisins for a fine texture, sweetness and an irresistible chewing experience.
