Let’s continue with my date omelet and date spread – A Persian Breakfast for Mother’s Day. In the first part of this series, I showed you how to make tasty Ajil Granola, flatbread wraps with feta and herbs, and sour fruits for breakfast. Today, I’ll show you how to make the perfect Date Omelet and Date Spread – A Persian Breakfast for Mother’s Day (Gheysavah).
A date omelet might sound strange – sweet mixed with salty and savory? But yes, it really tastes awesome! This mix of flavors is very common in Persian cuisine. The goal is always to find a nice balance. At the end, you can add a little cinnamon on top. If you like, add some date syrup too – it tastes so delicious. At the end of this post, I also share a beautiful and great-smelling gift idea.
FRESH DATES OR DRIED DATES?
For me, fresh dates are the best – and that’s what I use in this recipe. The best dates in the world come from the city of Bam in Iran. Iranian dates are dark brown, super sweet, soft, creamy, and juicy. These dates have no preservatives or additives, no sulfur, and no glucose syrup. And they are 100% natural and must be kept in the fridge.
In Persian food stores, you’ll find them stacked in packs in the fridge section. They taste best with a hot glass of tea. You can also cut them into your muesli, smoothie, or fruit salad.
WHY YOU SHOULD EAT UP TO 4 DATES EVERY DAY?
Dates are called the “bread of the desert.” They are very healthy, easy to digest, and full of natural fruit sugar (about 70%), which gives you quick energy. Dates also help your digestion as they are high in fiber – that’s why they are a real superfood.
- If you feel tired or low in the afternoon, just a few dates can give you new energy.
- Dates warm your body and give you strength. They are full of vitamins and minerals – like vitamin A, B, and K. They also have a lot of calcium, potassium, zinc, copper, iron, magnesium, and phosphorus. The high iron level is especially good if you have anemia (low iron).
- They can even help with hay fever! Because they contain sulfur, dates may reduce allergic reactions.
- Dates help with focus too. When I need to concentrate, I eat 1–2 dates. They give my brain and nerves quick energy.
- If you have trouble falling asleep, dates may help. They contain tryptophan, which helps your body make melatonin – the sleep hormone. This can calm you down and help you sleep better.
INGREDIENTS FOR DATE OMELET
4 fresh Iranian dates*
1/2 tsp cinnamon*
A pinch of ginger*
2 eggs
2 tsp milk
A pinch of salt
1 tsp butter
PREPARATION DATE OMELET
Cut the dates in half and take out the pits.
Put the dates in a small pot with cinnamon, ginger, and 3 tablespoons of water. Cook on low heat for 5 minutes until the dates are soft.
In a bowl, beat the eggs with milk and a pinch of salt.
Melt the butter in a frying pan. Add the soft dates and fry them in the butter for 2 minutes. Pour the egg mixture over the dates and let it cook until it sets.
Serve the omelet on a plate and sprinkle with more cinnamon.
DATE SPREAD – A NATURAL SUGAR SUBSTITUTE
Dates have a mild, sweet flavor, and I love using them instead of sugar. This way, you get all the healthy nutrients with fewer calories – dates are definitely a healthier option than regular sugar.
Date spread is delicious in yogurt, smoothies, salad dressings, and as a sweetener for ice cream, pudding, pancakes, waffles, and cakes – like my nectarine coconut yogurt tart. I also enjoy spreading it on Lavash bread.
Just a little tip: Keep the date spread in the fridge and try to finish it within a week for the best flavor!

200g fresh Iranian dates*
3 tsp orange blossom water*
150 ml water
3 tbsp honey*
1 tsp cinnamon*
PREPARATION DATE SPREAD
Remove the pits from the dates, cut them in half, and put them in a pot. Add honey, orange blossom water, cinnamon, and 150 ml of water.
Cook on medium heat for 4-5 minutes, stirring occasionally, until the dates become soft.
Use a blender to puree the mixture. If the spread is too thick, add a little more water. If it’s too thin, add a few more dates.
