Fall Salad with Apple, Feta and Caramelized Pistachios

It’s Fall! Can you smell it? Leaves change color, fog shrouds the city in the gloom, and it gets dark earlier. I love all seasons; each has its character. Welcome Fall with my delicious Fall Salad with Apple, Feta, and Caramelized Pistachios. I combine my autumnal salad, based on lettuce mix and lamb’s lettuce, with grated carrots and apple slices. Top it with sweet raisins soaked in apple juice, salty feta, sour pomegranate seeds, and crunchy caramelized pistachios. A savory-sweet honey mustard dressing rounds it out. A perfect combination of flavors and a true treat! I mean, who can resist this?

APPLE VARIETIES – SINK YOUR TEETH INTO FALL

Go to the farmers’ market and try out the different varieties of apples, as each one tastes great by itself. You will be surprised by how delicious and diverse the sorts taste. Most of the time, you will find only the same varieties of apples in the supermarket, and they end up tasting the same. My apples for this recipe are from a colleague’s tree and taste so good as they are sweet, fresh, crunchy, and juicy. Blessed are those who have an apple tree in their garden.

APPEL IN TEB-E SONATI

In Teb-e Sonati – a traditional Persian medicine, apples are regarded as cold and wet and reduce excess heat in the body. By eating apples, you can stay healthy throughout the fall and winter. Especially now in autumn, apples should be on your daily menu, as they offer many benefits for your health. They contain strong antioxidants with anti-inflammatory effects, including quercetin, catechin, hesperetin, and many more.

The high flavonoid content in apples strengthens pulmonary function and prevents asthma, as well as diabetes and coronary diseases. In addition, apples protect from osteoporosis and cancer, cleanse the liver, and sanitize the intestinal flora. When drunk as apple juice, they are particularly beneficial for the brain and prevent Alzheimer’s disease. Apples also help you lose weight if you eat them fifteen minutes before a main meal. Moreover, they clean our digestive system, beginning in the mouth and the teeth and ending in the intestines. The pectin inside lowers cholesterol levels binds toxins, and rinses them out. The potassium regulates water balance, so apples also have a diuretic effect.

LAMB’S LETTUCE IN TEB-E SONATI 

Lamb’s lettuce also has a cold and wet effect in traditional Persian medicine. During the cold months, this small nutrient bomb provides us with provitamin A, beta-carotene, vitamin C, folic acid, iron, potassium, calcium, and more. Vitamin C strengthens our immune system, especially during the cold season. Iron in lamb’s lettuce supports the transport of oxygen in our body. Folic acid supports the new formation of cells. While potassium regulates blood pressure and magnesium strengthens muscles, phosphorus helps to maintain the firm structure of bones and teeth, among other things. The essential valerian oils in lamb’s lettuce have a calming and relaxing effect on our bodies.

INGREDIENTS FALL SALAD

INGREDIENTS CARAMELIZED PISTACHIOS

50 g pistachios*

3 tbsp. cane sugar*

1 tsp butter

INGREDIENTS FALL SALAD

100 g lamb’s lettuce

150 g lettuce mix

1 green apple

1 red apple

1 carrot

INGREDIENTS TOPPING

50 g raisins*

100 g feta cheese

50 g pomegranate seeds

INGREDIENTS HONEY MUSTARD DRESSING

3 tbsp olive oil*

2 tbsp apple cider vinegar*

2 tsp lemon juice

1/4 tsp Dijon mustard*

1 tbsp. Acacia honey*

salt, pepper

PREPARATION CARAMELIZED PISTACHIOS

Melt butter over medium heat in a skillet, add sugar and pistachios. Caramelize for a maximum of 5 minutes, stirring constantly. Place the pistachios on a baking sheet and allow to cool.

PREPARATION FALL SALAD

Place lamb’s lettuce and lettuce mix in a bowl.

Slice apples thinly.

Grate carrot finely.

Add all ingredients to the salad.

PREPARATION TOPPING

Soak raisins in apple juice and strain after 10 min.

Break feta cheese into pieces.

Remove seeds from pomegranate.

PREPARATION HONEY MUSTARD DRESSING

Mix all ingredients for the dressing, drizzle over salad and mix well. Garnish with pomegranate seeds, raisins, feta and caramelized pistachios.
