Heirloom Beet Carpaccio with Feta and Walnuts

I’ve mentioned before how much I love shopping at our Farmers’ Market in Darmstadt*! It’s my go-to place for fresh, seasonal, and local products, which I love to share with you in all sorts of recipes on my blog. So, imagine my excitement when I spotted red and yellow heirloom beets! I knew it was finally time to show you my favorite recipe—Heirloom Beet Carpaccio with Feta and Walnuts. Candy striped beet and Feta? They’re a dream team! Not only do they make my carpaccio look colorful and gorgeous, but they also taste absolutely delicious.

The beet is nice and crunchy, the feta is soft and salty, and the walnuts add a perfect nutty flavor. My favorite dressing ties it all together—it’s made with red onion, juice from 2 bitter oranges, good olive oil, honey, mustard, salt, and pepper. It’s the perfect finishing touch for this carpaccio! Now, I can’t always find bitter oranges at the market, so I get them from my trusted greengrocer. Depending on the season, I switch up the dressing with regular orange, blood orange, or bitter orange juice. It’s always delicious! Looking for more salad ideas? SOAK WALNUTS

Before eating any kind of nuts, I always soak them overnight. Why? Because our digestive system struggles to break down unprocessed walnuts. So, here’s what I do: I start by rinsing the walnuts in a sieve under running water. Then, I soak them in a bowl with twice the amount of water. Throughout the evening, I change the water regularly, about every half hour. You’ll be amazed at the brown water that comes out—definitely something you don’t want to drink! Always throw it away. The next morning, I give the walnuts another rinse under running water. Now, they’re ready to eat, and they’re so much easier to digest! Plus, they taste super fresh, like they were just harvested. You’re going to love it!

HEALTHY HEIRLOOM BEETS

It’s such a treat to cut open a heirloom beet! The red one bursts with bright pink and white, while the yellow one glows like sunshine. Nature’s color game at its finest! Compared to regular beetroot, heirloom beet is sweeter and has less of that earthy taste. Its official name is Tonda di Chioggia or Chioggia beetroot, and it’s packed with goodness. It’s rich in vitamin B, potassium, iron, and folic acid—all important for blood health. Soaking the beet even boosts the vitamin and mineral content! Plus, it contains betanin, which strengthens your immune system, helps with blood clotting, and has anti-inflammatory benefits, and it’s a colorful and delicious way to nourish your body. Who says eating healthy can’t be a feast for the eyes and taste buds?

Heirloom Beet Carpaccio with Feta and Walnuts

INGREDIENTS HEIRLOOM BEET CARPACCIO

100 g walnuts*

4 red heirloom beets*

3 golden heirloom beets*

200 g feta cheese*

INGREDIENTS FOR DRESSING

1 red onion

2 bitter oranges or bitterorangepaste*

6 tbsp good olive oil*

1 tsp honey*

1 tsp Dijon mustard*

salt, pepper

PREPARATION OF HEIRLOOM BEET CARPACCIO

SOAK THE WALNUTS

Rinse the walnuts thoroughly, then soak them in a bowl of water overnight. The next day, drain and rinse them again under clean water.

PREPARATION HEIRLOOM BEET CARPACCIO

Peel the red and golden heirloom beets using a peeler* and slice them super thin. I like to use an all-purpose slicer* for this. Peel the onion and slice it into rings.

PREPARATION DRESSING

Squeeze the bitter oranges or orange and mix the juice with olive oil, honey, mustard, salt, and pepper until well combined.

ASSEMBLING THE CARPACCIO

Arrange the red and golden heirloom beet slices on a plate. Add the red onion rings and walnuts on top, drizzle with the dressing, and top with crumbled feta. Enjoy your colorful, healthy, and delicious creation!
