The Six-Hands Dinner – Top Chefs Celebrate Label Rouge Salmon featured three talented chefs—Carmelo Greco and Benedetto Russo from the Michelin-starred Restaurant Carmelo Greco. Together with Nils Henkel from Bootshaus at the Papa Rhein Hotel, they created a memorable culinary experience. Even though he stepped back from holding a Michelin star, Henkel’s passion and skills really stood out in every amazing dish he served. The dinner wowed everyone with its fancy, top-notch creations that really captured the joy of enjoying good food together.

Chicken Liver in Pomegranate jus with Quince Rings Sweet Potato Puree and Dark Horse Wine

My today’s recipe chicken liver in pomegranate jus with quince rings sweet potato puree and Dark Horse Wine is a real delicacy and could be an old oriental dish from the house of the Sultan. My pan-fried chicken liver is crispy on the outside and juicy rosy on the inside. It has a creamy texture and tastes simply delicious when combined with sweet quince caramelized in quince juice and honey and a creamy sweet potato purée. The crispy baked sage and the strong sweet and sour pomegranate jus, give the dish a unique flavor explosion! A perfect match is a strong red wine and in this case, a dry Zinfandel from Dark Horse goes perfectly with it.

Last year I was already invited and unfortunately could not participate. I´m so grateful that I was asked again this year. As the day of the Cooking contest got closer, I became more and more excited. I have never participated in such a cooking battle and this contest will be even filmed. Am I up to it at all, do I manage to cook the dish of a chef without any recipe and even stay within the given time of 90 minutes?

I would like to give you an idea of a fruity and fresh taste experience by sharing some facts about the “Äppler”, the German apple wine. The apple wine route passes over 250 km through the state of Hessen, starting in the south at the “Kelterei Krämer” and ending in the north at the “Brennerei Döhne” where about 12 local producers produce the delicious apple wine also called Stöffche. Join me on the part of the “Route du Äppler” around the region of Odenwald and Taunus outside of Frankfurt. The journey leads along beautiful meadow orchards and picturesque Hessian timber-framed houses. From Frankfurt to the Odenwald to Beerfurth, Reichelsheim, Michelstadt and ends in Oberursel in Taunus.
