NAN-E SABZI MASHHADI – PERSIAN HERB FLATBREAD

Preparing herb flatbread is simple and easy. All you need are basic ingredients such as flour, water, yeast, and some fresh herbs. The dough is mixed quickly and left to rise before being divided into small portions and baked. Nan-e sabzi is prepared with a variety of herbs such as parsley, coriander, or dill, which together provide a delicious taste. I prepared it with spring onions and flat-leaf parsley though.

It is also often baked with different vegetables such as onions, carrots, zucchini, spinach, peppers, mushrooms, or olives. This herb flatbread is not just unique because of its taste, but also its versatility. It is perfect as a side dish with grilled meat or main courses, as a snack, or for dipping. I served it with my Koofteh Kermanshahi – Persian Stuffed Meatballs, and it matched perfectly. My flatbread is also an excellent choice for vegetarians. WHY SHOULD YOU TRY THE HERB FLATBREADS?

INGREDIENTS PERSIAN HERB FLATBREAD

300 ml lukewarm water

2 tsp dry yeast

1 tbsp sugar

180 ml milk

5 tbsp olive oil

30 g spring onions, finely chopped

15 g parsley, finely chopped

1 tbsp salt

1 tsp turmeric

600 g type 550 wheat flour

PREPARATION OF PERSIAN HERB FLATBREAD

Preheat the oven to 175 ° top/bottom heat.

Combine the lukewarm water, dry yeast, and sugar in a large bowl. Cover the bowl and leave to rest in a warm place for 10 minutes to allow the yeast to rise.

Add the milk, olive oil, finely chopped spring onions, chopped flat-leaf parsley, salt, turmeric, and type 550 wheat flour to the bowl with the risen yeast. Mix well with a wooden spoon until the dough comes together. The dough is very sticky as it is high in liquid.

Line the Birkmann burger bun baking tray with baking paper. To do this, cut a baking sheet into quarters and trim the sides to make them nice and round. Divide the dough into 4 even portions and slide into the baking tin, cover with a cloth, and leave to rest for 15 minutes. Then brush the top with olive oil.

Place the baking tray in the oven for 40 to 45 minutes until the flatbread is baked through. Use a toothpick to test whether the flatbreads are cooked through. Remove from the oven and leave to cool slightly. The flatbreads will be kept in an airtight container in the fridge for up to 3 days.
