Happy World Bread Day 2023! Zorra from Blog Kochtopf has invited to bake bread as usual. I celebrate this great day here and here with many other bloggers and prepared Nan-e Keshta – Skillet Pumpkin Flatbread. The skillet pumpkin flatbread doesn’t require any yeast or baking powder, which makes it just rise a little bit. This bread is a traditional street food from Gilan, in the north of Iran, by the Caspian Sea. The bread is called Nan-e Keshta (نان کِشتا) in Gilani and is also known as Nan-e Khorfe (نان خُرفه) or -Kholfe (خُلفه). In addition, I have a stuffed version of pumpkin flatbread for you today. The filling is with ground walnuts, powdered sugar, and cinnamon. So you get two dishes from one dough. This way, both team sweeties and team savory can enjoy the meal.

Can you imagine a better summer treat than an ice-cold homemade iced tea? Today I have a recipe for a fresh and delicious saffron iced tea – آیس تی زعفران. The iced tea with saffron has a very aromatic flavor and lifts your mood. After all, a Persian quote says: “Drink a glass of saffron tea and get happy.” I prepared the recipe with black tea, but you can also use white tea instead. I don’t recommend Green tea, as it can overpower the fragrance of saffron. You can adjust the sugar level and the ingredients of a homemade iced tea to your taste. Haggis Scotch Eggs was the starter at 67 Pall Mall, and I liked it so much that I had to prepare it myself. The recipe for the Piccalilli, an Indian pickle, is also coming soon. Haggis Scotch Eggs are soft-boiled eggs surrounded by a layer of haggis and a crispy coating of panko and breadcrumbs. When you cut them, the egg yolk runs all over the plate, so mouth-watering. Haggis is the national dish of Scotland and consists of various offal of sheep, which are chopped finely and formed into a sausage. You can buy it ready-made, and the flavor is similar to a liver paste, and you can buy it ready-made. It goes well with the Barefoot Wine Chardonnay, which is delightfully fruity. A perfect combination!

It’s Veganuary and I made vegan pinto bean burgers with smokey flavors. Now you probably think a burger without meat, but does it taste good at all? Well, everyone here in this house is absolutely blown away. The vegan option is made with very simple ingredients and lots of flavor. A savory patty made of pinto beans, mushrooms, walnuts, parsley and chickpea flour is packed into the burger buns. Special spices provide a wonderful smoky aroma. They are topped with crisp lettuce, fresh tomatoes, and sour burger pickles. They become juicy with pickled red onions or with a delicious onion jam. Add some ketchup or burger relish on top and the vegan delight in a healthier fast food version can begin. The vegan burger is plant-based, gluten-free, and simple and inspires vegans, vegetarians, and all those who find vegan not so great.
