Wild Garlic Waffles with Salmon and Green Asparagus

Today, I celebrate The International Waffle Day with an irresistible creation: Wild Garlic Waffles with Salmon and Green Asparagus. Wild garlic adds an unmatched flavor to the waffles. Its intense aroma and health benefits make it a perfect addition to this recipe. The wild garlic adds a wonderful green color, making the waffles delicious and beautiful. The highlight on the waffles is the grilled salmon. Its tender texture and rich taste make it a treat for any occasion.

The fresh and aromatic grilled asparagus has tender tips and a crunchy texture that harmonizes well with the wild garlic waffles. WILD GARLIC WAFFLES WITH SALMON AND GREEN ASPARAGUS FOR EASTER

Easter is a time for gathering, celebrating, and enjoying good food. So nothing could be more festive than an Easter brunch that boasts mouth-watering dishes and delicious flavors? My wild garlic waffles with salmon and asparagus make the perfect Easter brunch treat. Serve these waffles for breakfast, brunch, or as a main course – you will wow all your guests.

VARIETY OF WAFFLES WORLDWIDE

Waffles are prepared worldwide, from sweet to savory, crispy or fluffy, everyone can find a waffle variation to suit their taste. But the culinary diversity doesn’t stop there. Vegan, gluten-free, sweet, or savory – the possibilities are endless. So, let the irons heat up and celebrate waffles – not just today, but every day. After all, waffles are more than just a pastry, they are a symbol of pleasure, joy, and friendship.

Let’s start the journey in Belgium, famous for its delicious waffles. Belgian waffles are well known for their thick, fluffy texture and are served with powdered sugar, fresh fruit, and cream. A variation of Belgian waffles is Liège waffles, made with hail sugar in the batter. It creates a caramelized crust that gives these waffles their unique taste. Perfect for those with a sweet tooth! A traditional German waffle is a heart-shaped waffle sold at fairs and folk festivals. They have a characteristic heart shape and are sprinkled with powdered sugar or served with hot cherries and cream.

WAFFLES OUT OF MY FUSION KITCHEN

Waffles are a popular breakfast dish in the USA. American waffles come with syrup, butter, and fresh fruit. They are crispy on the outside and fluffy on the inside. In Scandinavia, waffles are part of a coffee break. Scandinavian waffles are thin and served with cream and strawberry jam. A simple but delicious treat! In Hong Kong, waffles are a popular snack. Hong Kong waffles are crispy on the outside and soft on the inside. They are served with ice cream and sweet toppings such as fruit or chocolate.

In Iran, we love the Persian rosette waffles – Nan Panjeereh. Furthermore, there are some of my fusion waffle recipes, e.g. baklava waffles from 1001 Nights or my gluten-free heart waffles on a stick with rose water.

INGREDIENTS GRILLED SALMON

6 salmon fillets with skin

1/2 bunch dill, finely chopped

4 tbsp olive oil

1 organic lemon

1 red onion

salt, pepper

INGREDIENTS WILD GARLIC WAFFLES

100 g wild garlic

1 handful of baby spinach

4 eggs

300 ml milk

125 g butter, melted

300 g flour

2 tsp baking powder

salt, pepper

INGREDIENTS GRILLED ASPARAGUS

12 green asparagus spears

Brush with a little olive oil

salt, pepper

INGREDIENTS LEMON DILL SAUCE

1 cup of crème fraîche

4 tbsp lemon juice

1/2 organic lemon, grated zest

15 g dill, finely chopped

salt, pepper

TOPPING (optional)

1 jar of salmon eggs

PREPARATION OF GRILLED SALMON FILLET

Rinse the salmon fillets and pat dry. Chop the dill, and set aside. Mix the olive oil, chopped dill, salt, and freshly ground pepper. Coat the salmon with the marinade, cover, and leave to marinate in the fridge for an hour.

In the meantime, prepare the waffles, asparagus, and lemon-dill sauce.

PREPARING WILD GARLIC WAFFLES

Wash the wild garlic and baby spinach and spin dry in a spin dryer. Place in a blender with the eggs, milk, melted butter and mix. Place the flour, baking powder, salt, and pepper in a bowl. Add the wild garlic mixture and mix everything with a whisk to form a smooth batter. Preheat the waffle iron and grease lightly. Pour in the batter in batches and bake. Repeat the process with the remaining batter.

PREPARATION OF GRILLED ASPARAGUS

Peel the ends of the asparagus and cut off a bit. Brush the asparagus with olive oil and season with salt and pepper. Grill for a few minutes on the barbecue or the OptiGrill as I did. Remove and keep warm.

PREPARING THE LEMON-DILL SAUCE

Mix the crème fraîche with the lemon juice, grated lemon zest, finely chopped dill, salt and pepper. Set aside.

PREPARATION OF GRILLED SALMON FILLET

Wash and slice the lemon. Peel the onion and cut it into rings. Place the marinated salmon in a grill pan or the OptiGrill. Place the lemon slices and onions on top. Grill the salmon for approx. 6 – 8 minutes. Then arrange on the waffles and serve with grilled asparagus, salmon eggs (optional) and lemon and dill sauce.
