Welcome Fall with my delicious Fall Salad with Apple, Feta, and Caramelized Pistachios. I combine my autumnal salad, based on lettuce mix and lamb’s lettuce, with grated carrots and apple slices. Top it with sweet raisins soaked in apple juice, salty feta, sour pomegranate seeds, and crunchy caramelized pistachios. A savory-sweet honey mustard dressing rounds it out. Yatimcheh – Vegan Eggplant Stew یتیمچه is a vegan Persian recipe that you can prepare in no time. It is a popular and wide-spread traditional recipe from across the country in Iran. In addition, it is an inexpensive and tasty dish with simple ingredients, as we use everything from the fields and meadows. It tastes great in late summer with sweet, fresh tomatoes. Yatimcheh is a one-pot dish, and the ingredients are layered up in a pan or pot. The main ingredients are eggplants, tomatoes, multicoloured peppers, potatoes, onions and garlic. Have you ever stuffed tomatoes? It’s about time. My Dolmeh Godje Faranghi – Persian style stuffed tomatoes دلمه گوجه فرنگی are light, healthy and vegan. I harvest the tomatoes for this recipe from my garden. There are still some hanging on the bush, but I believe that’s the end of the tomato harvest for this year. Cut the tops off the tomatoes and scoop them out. Fill them with rice and herbs such as cilantro, parsley, mint, and season with turmeric. Place the cap on top and put it in the baking dish, cover with a lemony tomato sauce and bake in the oven. Now you only have to wait. Baking in the oven makes the tomatoes very aromatic, sweet, and with the lemony sauce, a taste explosion in your mouth.

Haggis Scotch Eggs are soft-boiled eggs surrounded by a layer of haggis and a crispy coating of panko and breadcrumbs. When you cut them, the egg yolk runs all over the plate, so mouth-watering. Haggis is the national dish of Scotland and consists of various offal of sheep, which are chopped finely and formed into a sausage. You can buy it ready-made, and the flavor is similar to a liver paste, and you can buy it ready-made. It goes well with the Barefoot Wine Chardonnay, which is delightfully fruity. A perfect combination!

Soup-e Esfenadj – Spinach Soup for Tirgan

Tirgan Mobarak! Happy Tirgan! Like all our Persian festivals, at Tirgan, there is a lot of dancing, singing, and reciting poems. It’s tradition to splash water on each other (Ab Pashi) on this day. We also eat certain foods, such as my Soup-e Esfenadj – Spinach Soup for Tirgan. The recipe is super simple! The soup includes fresh baby spinach, potatoes, onions, and oriental spices. It’s vegetarian, as I made it with vegetable stock, but you can also use chicken stock. Add a blob of Greek yogurt, fresh mint, and a few drops of good olive oil to garnish. This creamy, healthy, and delicious soup is on your table in no time.
