PICKLED VEGETABLES IN PERSIAN CUISINE
Let’s talk about pickled vegetables in Persian cuisine. Persian food is known for its variety and delicious flavors, and pickled vegetables, called torshi and shoor, are a big part of it. Find my recipe for Torshi Liteh – pickled vegetables ترشی لیته, Sir Torshi – Pickled Garlic, Piaz Torshi – Pickled Onions or Khiyar Shoor – Pickled Cucumbers. These spicy side dishes are popular in Iranian families and they add so much flavor and even health benefits to every meal. When it comes to pickled veggies, the ones you make at home are a better choice as they don’t have any extra preservatives you find in store-bought ones. So, go natural and enjoy your pickled vegetables! Try also my recipe for Piccalilli – English Mustard Pickle, Rhubarb and Date Chutney or Zeytoon Parvardeh – Persian marinated Olives.
HEALTH BENEFITS OF PICKLED RADISHES
In accordance with traditional Iranian medicine, radishes possess warm and dry properties that make them highly effective in treating conditions such as rheumatism, cancer, respiratory diseases, hair growth, detoxification, and skin health. Additionally, pickled vegetables, including radishes, offer various benefits such as lowering blood fat, regulating stomach acidity, and preventing cancer. Despite the coarseness of their leaves and their distinctive peppery flavor, radishes are commonly consumed raw. It’s important not to overlook the potential health benefits offered by the leaves, seeds, and roots of this plant.
EASY PICKLED RADISH SERVING SUGGESTIONS
Easy pickled radishes are incredibly versatile and can truly elevate the flavors of many dishes. Their delightful crunchy texture and zesty flavor make them a wonderful addition to a variety of recipes. Here are some of my personal favorite ways to use pickled radishes, as they complement many Persian dishes perfectly. They work especially well with grilled meat, Kababs, or as a spicy accompaniment to rice dishes. Furthermore, pickled radishes bring a special touch to sandwiches or when served as part of a mezze platter.
IN SALADS
Pickled radishes are a fantastic choice for any salad. They add a lovely kick of spice and a satisfying crunch to both green and colorful vegetable salads, as well as pasta or rice salads. Not only do they bring great flavor, but they also add a pop of color and a delightful texture to your dish. Plus, their spicy notes blend beautifully with the other ingredients, giving your salad that extra special touch.
AS A STARTER
As an appetizer, pickled radishes are visually appealing. They can be easily arranged on a plate and garnished with fresh herbs. Adding some olive oil and fresh bread can create a light and refreshing beginning to your meal.
AS A SIDE DISH
As a side dish, pickled radishes are a perfect addition to a savory snack or sandwich, complementing charcuterie, cheese, and fresh bread with a burst of flavor.
FOR BARBECUE
Preserved radishes are a wonderful addition to a barbecue spread. They offer a delightful crunch and burst of flavor to complement kababs, grilled meat, fish, or vegetables. Feel free to serve them alongside other delicious side dishes and savor the moment.
AS A SALAD DRESSING
You can mix the marinade from the pickled radishes with some oil to craft a delightful and tangy salad dressing, ensuring that none of the delicious radishes go to waste.
