Are you looking for a tasty side dish for a special occasion? How about a bright and fragrant Vegan jeweled rice salad? This rice salad is based on the warm Persian jeweled rice. It’s the perfect summer dish that can easily be prepared in advance. It’s just perfect for a picnic as well as for a special feast or party. The colorful bright jewels in the salad are made of emerald (pistachios), ruby (barberries and pomegranate seeds), gold (saffron rice and carrots), and pearls (almonds). Fragrant saffron and warm spices like turmeric, cumin, cardamom, and cinnamon add that special touch to my rice salad and will impress your guests. My Jeweled Rice Salad is a feast for the senses and transports you directly to the orient.
VEGAN JEWELED RICE SALAD
When it’s warm outside and you’d rather eat something fresh, this vegan Jewel Rice Salad is perfect. The rice salad is very filling and nutritious on its own but also pairs as a side dish with vegan dishes such as vegan kebabs, vegan red lentil meatballs, broad green beans with tomatoes, and eggplants or eggplant with black-eyed peas in tamarind sauce. But also goes well with chicken, meat, and fish, such as grilled chicken, roast chicken, grilled kabab, or fillet of dorade. I usually prepare a little more rice so I can make a delicious rice salad for the next day. But you can also make the recipe with the ready-made parboiled basmati rice. SAFFRON DAY
Saffron is often spoiled, so when you buy it, be careful not to buy the wrong saffron, which is called safflower. Safflower is the coloring thistle, which was often used for dyeing silk. This dyes the dish much weaker than the real saffron and does not have the typical aroma of saffron. It is best to buy saffron as threads, as ground saffron is usually stretched with turmeric, paprika, and other things. Here you can find more delicious recipes with saffron on my blog. INGREDIENTS SAFFRON EXTRACT
1/4 tsp saffron threads*
3 tsp sugar
INGREDIENTS JEWELED RICE SALAD
20 g barberries*
1 pomegranate*, seeded
1 carrot*, slivered
20 g almonds* slivered
20 g pistachios* slivered
500 g already cooked rice ( about 200 g raw rice)
INGREDIENTS SPICE MIXTURE
1/2 tsp ground cinnamon*
1/2 tsp ground cumin*
1/4 tsp ground cardamom*
salt and pepper
INGREDIENTS DRESSING
1 medium red onion, finely diced
2 tablespoons orange flower water*
2 tablespoons olive oil*
1 tablespoon lemon juice
1 tsp honey* (omitted for vegan)
Salt & pepper
PREPARATION SAFFRON EXTRACT
Finely grind in a mortar saffron threads with sugar,
pour with 20 ml of boiling water, leave covered in a small jug.
PREPARATION VEGAN JEWELED RICE SALAD
Soak barberries in cold water until everything is prepared, then strain in a colander and dry with a kitchen towel.
Cut the pomegranate in half and remove the seeds. Set the seeds aside.
Peel the carrot and cut into fine slivers.
Mix the already cooked rice well with saffron extract.
Add all the other ingredients together with the slivered almonds and pistachios and mix well with the seasoning mixture.
PREPARATION DRESSING
Finely dice red onion and mix well with all other ingredients.
Pour over the Jeweled Rice Salad and mix well.
Leave in the refrigerator for about 1 hour and then serve.
The salad keeps up to 3 days well-chilled in the fridge, so it can be prepared well.
