Coconut Pumpkin Soup

Coconut Pumpkin Soup

After our day out in the snow, there’s nothing I want more than a hot meal. First of all, it’s bitterly cold out there. Our hands are numb, our noses are red, and we’re craving warmth. So, what warms you up best from the inside? A steaming bowl of soup, of course!

Today, I’m cooking one of my all-time favorite recipes: a creamy Coconut Pumpkin Soup with Hokkaido Pumpkin, black mustard seeds and a hint of orange. Not only is it silky and lightly fruity, but it’s also wonderfully spiced. The coconut milk adds an exotic touch, while the spices turn every spoonful into a feast for the senses.

The best part? This Ayurvedic pumpkin soup is quick and easy to make. As it simmers on the stove, a gorgeous aroma drifts through the kitchen. I could climb right in!

On chilly autumn and winter evenings, I can’t think of anything cozier than curling up on the sofa with a bowl of hot soup. Add a piece of crusty flatbread, and my happiness is complete.

WHY HOKKAIDO PUMPKIN IS PERFECT FOR SOUP

Hokkaido (also known as red kuri squash) is my absolute favorite pumpkin. Why? You can eat the skin! No wrestling with a tough, stubborn peel. I simply wash the pumpkin, scoop out the seeds and cut it into small pieces. It’s ready for the pot in minutes.

The flesh tastes pleasantly nutty and slightly sweet. Blended with creamy coconut milk, it makes a wonderfully velvety pumpkin soup, and freshly squeezed orange juice adds a fruity lift. For me, this combination is unbeatable. The natural sweetness of the pumpkin, the exotic coconut milk and the bright orange work together beautifully.

One more tip: don’t throw away the seeds! Roast them instead. Try my recipes for salted roasted pumpkin seeds or sweet roasted pumpkin seeds, and you’ll use almost the whole pumpkin, so you have the best Zero Waste Cooking Recipe.

AYURVEDIC PUMPKIN SOUP WITH BLACK MUSTARD SEEDS

Spices play a starring role in Ayurvedic cooking. They bring aroma to our dishes and turn a meal into an experience for the senses. To me, spices feel like a little miracle every time. They smell wonderful, crackle in the pan, release their aromas and transform simple ingredients into something special.

In this Ayurvedic pumpkin soup, the black mustard seeds take center stage. As soon as I add them to hot sesame oil, they start to pop and jump around the pot. I quickly pop on a lid and wait for the little show to finish. It makes me smile every time!

Next, I add the chopped chili, leek, paprika or curry powder, nutmeg and pumpkin pieces. I sauté everything briefly and let the spices release their aromas. The kitchen already smells wonderfully warm and fragrant.

Vegetable stock and coconut milk make the soup beautifully creamy. After about 20 minutes, the pumpkin is soft and I blend everything until smooth. Last of all, I stir in the freshly squeezed orange juice for a bright, fruity finish. A little salt and pepper, and my warming coconut pumpkin soup is ready!

COOK YOUR WAY TO HAPPINESS WITH AYURVEDA

I found this recipe in the cookbook “Koch dich glücklich mit Ayurveda” by Volker Mehl. Volker Mehl is an Ayurvedic chef from Hesse, and the way he combines spices and ingredients inspires me.

This soup really does make me happy. Maybe it’s the creamy texture, maybe it’s the fragrant spices, or maybe it’s simply that a hot soup feels so good on a cold day. I love recipes that are uncomplicated yet packed with flavor, and that’s exactly what I value in this Ayurvedic pumpkin soup.

It suits the cold season perfectly and fits easily into everyday life. After a long day, I don’t want anything complicated. A few fresh ingredients, aromatic spices and one pot are all I need.

WHAT IS AYURVEDA?

Ayurveda is an ancient system of wellbeing from India. The name comes from Sanskrit and means “knowledge of life”. It focuses on balance between body, mind and spirit, and food plays a key role. Fresh ingredients and aromatic spices such as mustard seeds, chili, nutmeg or turmeric are part of a balanced daily routine.

According to Ayurvedic tradition, there are three constitution types, known as doshas: Vata, Pitta and Kapha. Warm, spiced dishes like this pumpkin soup are considered especially comforting in the colder months. For me, Ayurveda means one thing above all: cooking mindfully and enjoying every bite with all the senses.

FLATBREAD – THE PERFECT PARTNER FOR PUMPKIN SOUP

For me, a good soup always calls for fresh bread, such as a simple baguette or a no-knead saffron bread baked in a pot. My favorite is this creamy coconut pumpkin soup with crusty flatbread (Barbari bread made in the air fryer). In Darmstadt, a Turkish bakery bakes its flatbread in a charcoal oven. When I’m short on time, I pick some up there. If you ever visit Darmstadt, be sure to stop by Nazar.

I like to buy several loaves at once. At home, I cut them into toaster-sized slices and freeze them in portions. When I’m craving fresh bread, I take a few slices from the freezer and crisp them up in the toaster. The result? Crunchy on the outside, soft on the inside, and ideal for dunking into creamy pumpkin soup.

For me, this combination is simply unbeatable. I could happily finish the whole pot!
