Meanwhile many people eat vegetarian or vegan, therefore you should also prepare something with vegetables. If you are looking for the perfect recipe for delicious, colorful veggie skewers for your next BBQ party, then I’ ve got a perfect recipe for you – Kabab-e Sabzidjat – Vegan Kebab کباب سبزیجات. We love these vegan skewers as they’re not only tasty and colorful, but are also healthy. More yet, the preparation is as easy as pie. Give a try with hummus or harissa hummus, it matches perfectly.
MARINADE FOR VEGAN SKEWERS
I like to prepare meals in several steps, and this recipe is one of them. For the marinade, simply mix freshly pressed garlic, paprika, cilantro, and cumin powder with olive oil, lemon juice, and white wine vinegar. Some flat leaf parsley and fresh cilantro add great flavor. Season with salt and pepper and then marinate the chopped veggies overnight. It’s easy to prepare and the marinade is a real treat for the palate.
The next day it goes really quickly. Depending on whether you prepare the vegan skewers in a grill pan or on the grill, the cooking time may vary slightly. On the grill, they only need 5 – 8 minutes, in the grill pan about 15 minutes and in the oven about 20 – 30 minutes. In any case, always keep an eye on your vegan skewers to make sure they stay juicy and still have a light bite.
KABAB IN PERSIA
In Persia, we have several variants of kabab, as they are very popular among small and big, young and old. The most popular and therefore our national dish is Chelow Kabab (چلوکباب). Grilled meat (Kabab) is served with Persian rice (Chelow). In Germany, people always relate kabab to meat, as meat kababs are very popular over here too. However, kabab is translated both roasted, fried, and grilled. But why simple if it can be complicated, as it may be meals from a pan, from a skewer, but also stews or meatballs. Besides meat and minced meat, it can be from chicken, fish, seafood, vegetables, or fruit. The attachment brings then more clarity, as in this recipe Kabab-e Sabzidjat, which means grilled vegetables or exactly translated vegetable Kabab.
VEGETARIANS OR VEGANS IN IRAN
Nowadays many young people are vegetarians and vegans, so cooking habits are also changing. Most people think that you only can find meat dishes and kebabs in Persia. But in the big cities, especially in the capital Tehran, you can find some vegetarian restaurants, e.g. the Iranian Artist Forum Veggie Restaurant, and even vegan restaurants, e.g. the Zamin Vegan Restaurant. But you also can order vegetarian dishes in regular restaurants. Ask in the restaurant for dishes like Samosa, Falafel, Eshkeneh, Mirza Ghasemi, Kashk-e Bademjan, Khorak-e Badmjan, Adassi, Yatimak, Dal Adas and all Boranis, as they are veggie.
INGREDIENTS VEGAN KEBAB
2 zucchini
1 red onion
1 white onion
250 g small mushrooms
1 yellow, red and green bell pepper
100 g red cherry tomatoes
100 g yellow cherry tomatoes
INGREDIENTS MARINADE
3 cloves of garlic
2 tablespoons olive oil*
1 tsp bell pepper powder*
1 tsp coriander powder*
1/4 tsp cumin powder*
juice of half a lemon
1 handful flat leaf parsley
1 handful fresh cilantro
1 tablespoon white wine vinegar
salt, pepper
OTHER INGREDIENTS
20 skewers*
PREPARATION VEGAN KEBAB
Slice the zucchini. Peel and quarter the onion. Cut all peppers in half, remove the seeds and cut in half again, then again into 3 pieces.
PREPARATION MARINADE
Put all the ingredients in a blender and mix well. Place the vegetables in a bowl and mix well together with the marinade. Cover the bowl and refrigerate for at least 4 hours or better overnight.
THE NEXT DAY
About half an hour before starting, soak the skewers in cold water. This prevents them from burning. Stick the vegetables alternately on one skewer, brush them with the remaining marinade and roast them over the grill. In a grill pan fry them with a little oil until the vegetables are roasted all over. It takes about 5 – 8 minutes. In the oven: set the Oven to 220° and grill for 20 – 30 min.
The best match is a dip, such as hummus. You can also serve them in a pita bread and add some tomatoes and herbs.
