Creamy Wild Garlic Hummus with Crispy Flatbread Sticks

It’s wild garlic season, and today, I’ve got a simple recipe for you! I whipped up a Creamy Wild Garlic Hummus with Crispy Flatbread Sticks. If you’re not familiar with hummus, it’s a Middle Eastern dip made primarily from chickpeas. Now, onto my version! I’ve infused it with wild garlic, giving it a beautiful green hue and a deliciously subtle spiciness and garlic flavor. Wild garlic is like a fancier, milder cousin of regular garlic, so it’s perfect if you’re not a fan of the strong garlic smell.

CREAMY WILD GARLIC HUMMUS

I like to use dried chickpeas, soaking them overnight and cooking them the next day for extra texture. But if you’re short on time, canned chickpeas work just fine too. Hummus is part of a mezze, which is a spread of small dishes served in Middle Eastern cuisine, kinda like appetizers. CRISPY FLAT BREAD STICKS TO DIP

I love to pimp a fresh Arabic bread to dip in the creamy wild garlic hummus. First, cut the bread into strips. Then, make a yummy marinade with olive oil, chili flakes, salt, and lemon zest. Brush this tasty mix onto the bread strips.

Bread is a big part of Persian food, along with rice. In Persian tradition, we eat with our right hand for hygienic reasons. We use our thumb, pointer finger, and middle finger to grab the food and eat it. When we have creamy or liquid foods, we often use bread instead of a spoon.

Try using veggie sticks, crackers, or different types of bread to dip in the hummus. You could even make Persian Nan-e Barbari – Persian Flatbread, Traditional Persian Lavash Bread or a Nan-e Keshta – Skillet Pumpkin Flatbread for dipping. Enjoy!

GROWING YOUR OWN WILD GARLIC

Spring is in full swing, and for many of us, that means it’s wild garlic season! If you’re like me and have a penchant for this vibrant herb, you might have even planted some in your garden last year. Why? Because while it’s a delight to forage for wild garlic in the woods, it’s often not allowed due to conservation efforts. So, what’s a garlic enthusiast to do? Plant your own, of course!

Last year, I decided to take matters into my own hands and planted wild garlic in my garden. I knew I’d have to wait patiently until this year to harvest it, allowing it time to establish strong roots and spread its seeds for future growth. And let me tell you, the anticipation is real! But fear not, fellow wild garlic lovers, because luckily, there’s a local fruit and veggie shop that sells fresh wild garlic.

Now, let’s talk about the taste. Wild garlic is at its prime when its leaves are bright green, young, and juicy. That’s when you know you’re in for a flavor explosion! Its delicate yet distinct garlicky flavor adds a unique touch to any dish, from soups and salads to pestos and sauces.

FRÜHLING AUF DEM TELLER

Today, I’m sharing a fresh spring recipe: Creamy Wild Garlic Hummus with Crispy Flatbread Sticks. I’m excited to be part of a blog event called “Frühling auf dem Teller” organized by Zora and Britta from Backmädchen 1967. We’ve all come up with some tasty wild garlic recipes! INGREDIENTS WILD GARLIC HUMMUS

500 g chickpeas*

1 bunch wild garlic, chopped finely

3 tbsp tahini* (sesame paste)

1 lemon, juice and zest

1/2 tsp cumin*

1 tsp salt

3 ice cubes

Olive oil for drizzling *

PREPARATION WILD GARLIC HUMMUS

Toast Cumin Seeds: Put cumin seeds in a pan and toast them without adding any oil. Once toasted, grind them using a mortar.

Prepare Lemon: Use a grater to zest the lemon. Set the zest aside and squeeze out the juice.

Prepare Chickpeas: Drain the chickpeas using a sieve and rinse them with clean water. Save some chickpeas for garnishing later.

Blend Ingredients: In a blender, combine the toasted cumin seeds, lemon zest, lemon juice, chickpeas, and wild garlic. Add the ice cubes one by one to help blend everything smoothly.

Final Touch: Transfer the blended mixture to a bowl. Use the back of a spoon to create rings on the surface of the hummus. Drizzle some olive oil over the top.

Garnish: Decorate the hummus with the saved chickpeas and lemon zest.

INGREDIENTS CRISPY FLATBREAD STICKS

4 Arabic breads

1 lemon zest

chili flakes*

salt flakes*

4 tbsp olive oil*

PREPARATION OF CRISPY FLATBREAD STICKS

Preheat the oven to 220°.

Cut the Arabic bread in half and slice into strips.

Mix the olive oil, salt, chili flakes and lemon zest well. Brush the bread strips with the mixture.

Place on a baking tray lined with baking paper and bake in the oven for 12-15 minutes until crispy. Keep an eye on them to ensure the bread strips don’t burn.
