Tomato Salad with Pomegranate-Sumac Dressing

Summer is salad time, so the kitchen stays cold, and a tomato salad with pomegranate sumac dressing is a welcome refreshment. Large, small, black, and colorful sun-ripened tomatoes, soft mild onions, and an oriental Dressing of pomegranate molasses, grated tomato, best olive oil, and tart sumac finish the taste. Tomato salad with a sweet fruity pomegranate dressing is not only refreshing, but it is also prepared in a snap and is even vegan. All these ingredients transform a simple tomato salad into a unique dish.

TOMATO SEASON AND BLACK TOMATOES

July to September is tomato season, and we finally have tasty tomatoes in all colors and varieties. This year I harvested black cocktail tomatoes from the garden, which look great, have an intense flavor, and are sweet. A little star appears on the tomato when removing the stem base from the black cocktail tomato. I have to admit that little things like this catch and delight me.

I like to prepare tomato dishes for barbecues or surprise visits in tomato season. On the blog, you can find some Persian and Oriental tomato recipes; check them out for yourself.

KNEAD RAW ONIONS WITH SALT

Kneading raw onions with salt is a simple way to soften the onion’s texture. Salting bursts the cell walls of the onion slices, and they become soft as a result. In addition, it takes the sharpness away as they often have a sharp taste, and not everyone likes that. Besides, raw onions are not very easy to digest, but kneading them with salt makes them much more digestible.

Sliced onions should not be stored after cutting, as they oxidize quickly when in contact with oxygen. The result is a metallic or bitter taste. Kneading with salt, though, slows down the oxidation. In addition, the beneficial substances from the onion are released better by salting. For my recipe, cut the onion into rings, add 1 tsp of salt, and knead until they are soft. If they are too salty, rinse the onions under cold water and then pat dry. I like to leave the salt on, though.

INGREDIENTS TOMATO SALAD

1 red onion

1 tsp salt

250g black cocktail tomatoes

250g yellow, orange and red cherry tomatoes

250g medium vine tomatoes

INGREDIENTS POMEGRANATE-SUMAC DRESSING

1 tomato, grated

3-4 tbsp olive oil*

2 tbsp pomegranate molasses*

1,5 tsp sumac*

salt

TOPPING (optional)

2 – 3 tbsp pomegranate seeds

PREPARATION TOMATO SALAD

Cut the onion into rings, add salt, and knead well. Cut the cherry tomatoes in half. Also, halve the vine tomatoes, then cut them into slices. Place them in a bowl or a dish.

PREPARATION POMEGRANATE-SUMAC DRESSING

Grate one tomato on a grater and place it in a bowl. Mix well with pomegranate syrup, olive oil, salt, and sumac, and pour over the salad. Mix everything well, place onions on top, and serve with bread.

TOPPING (optional)

Optionally, you can also top the salad with pomegranate seeds.

Serve with Nana Barbari bread – Persian flatbread,Nan-e Taftoon – Persian Nan bread from the pan or Lavash bread, and a good glass of Chardonnay or Rivaner wine.
